Chicken Meatloaf with Sun-Dried Tomatoes

  1. Bring 1/4 cup of salted water to a boil in a medium pot.
  2. Turn off the heat.
  3. Add the couscous, cover, and let sit 5 minutes.
  4. Fluff with a fork.
  5. Heat the oil in a large saute pan over medium heat.
  6. Add the onion and saute until translucent, about 3 minutes.
  7. Add the mushrooms, garlic and thyme and cook about 5 more minutes, until mushrooms are soft.
  8. Remove from the heat and cool to room temperature.
  9. Preheat the oven to 350 degrees F.
  10. Combine the couscous, egg, the mushroom mixture and sun-dried tomatoes with the ground turkey.
  11. Season with salt and white pepper.
  12. Use your hands to shape the mixture into a loaf.
  13. Arrange the loaf on a parchment-lined sheet pan.
  14. Coat the top with a layer of ketchup if you'd like a glaze.
  15. Bake for 45 minutes to 1 hour.
