Holiday Quiche Recipe
- 1 1/2 c. flour
- 2/3 c. butter flavored Crisco
- 1 1/2 c. finely crushed butter-type crackers (Hi-Ho)
- 1/2 c. water
- 1 c. shredded Monterey Jack cheese
- 1 c. shredded cheddar cheese
- 2/3 c. minced ham, cooked sausage, pepperoni, or possibly crumbled bacon
- 3/4 c. thin sliced green onion
- 4 ounce. diced pimentos, liquid removed
- 1/4 c. snipped fresh parsley
- 1/2 teaspoon pepper
- 5 Large eggs
- 1 c. whipping cream
- 1 teaspoon salt
- 1 c. half and half
- Heat oven to 400 degrees.
- Combine flour and cracker crumbs.
- Cut in Crisco.
- Sprinkle with water - 1 Tbsp.
- at a time.
- Press into ungreased 15 x 10 x 1 inch pan.
- Prick with a fork.
- Prepare filling by sprinkling cheese, meat, onion, parsley, and pimentos over crust.
- Beat Large eggs, creams, and seasonings.
- Pour filling over crust.
- Bake 25-30 min.
- Cold 5-10 min.
- Serve hot.
- Great for brunch or possibly cut in small pcs for an appetizer.
