Pork Piccata
- 2 cups wide egg noodles
- 1 can (10 oz) condensed cream of chicken soup
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 Tbsp. Dijon mustard
- 2 Tbsp. water
- 1/4 tsp. dried thyme leaves
- 2 Tbsp. oil
- 1 lb. pork cutlets or scallopine King Sooper's 1 lb For $1.99 thru 02/09
- Cook noodles according to package directions.
- Drain.
- Mix soup, lemon juice, mustard, water and thyme in small bowl.
- Brown pork in oil in frypan over medium-high heat.
- Drain fat.
- Add soup mixture.
- Bring to boil over medium heat.
- Cover and simmer over low heat 10-15 minutes.
- Serve pork over cooked noodles.
