Kalbasa, potatoes, carrots and onions
- 1 lb kalbasa, sliced
- 6 large russet potatoes, diced
- 3 large carrots, peeled and sliced
- 1 large onion, chopped
- 2 clove garlic, minced
- 1 tbsp sun dried tomatoes, diced
- 2 tbsp olive oil
- 2 tbsp Jamaican Jerk season
- 1 tsp thyme
- Preheat oven to 400
- Mix all the ingredients in a large bowl.
- Spread mixed ingredients onto a glass casserole dish and cover with aluminum foil.
- Bake for 1/2 hour.
- Remove aluminum and stir.
- Place back into oven for 1/2 hour stirring after 15 minutes.
- Remove and enjoy!
