Fresh Tomato and Garlic Penne for Two

  1. Cook and drain pasta as directed on package, omitting salt.
  2. Meanwhile, in 10-inch skillet, heat oil over medium-high heat.
  3. Cook garlic in oil 30 seconds, stirring frequently.
  4. Stir in tomatoes.
  5. Cook 5 to 8 minutes, stirring frequently, until tomatoes are soft and sauce is slightly thickened.
  6. Stir in basil, salt and pepper.
  7. Cook 1 minute.
  8. Serve sauce over pasta.
  9. Optional - Add chicken to this pasta dish.
  10. After cooking the garlic, add about 1/2 pound cubed boneless skinless chicken; cook until no longer pink in center.
