Turkey Picadillo
- 1 lb ground turkey
- 1 cup onion, chopped
- 12 cup green bell pepper, finely chopped
- 3 garlic cloves, minced
- 14 teaspoon dried oregano
- 14 teaspoon ground cloves, you can use more to taste
- 3 cups tomatoes, chopped
- 12 cup water
- 14 cup tomato paste
- 15 small pimento stuffed olives, sliced
- 14 cup raisins
- 18 teaspoon ground red pepper
- 2 teaspoons distilled white vinegar
- salt
- Cook the turkey in a nonstick skillet with the onion, green pepper, and garlic over medium heat until the turkey is no longer pink about 6 to 7 minutes.
- Mix in the oregano and cloves.
- Stir in the tomatoes, water, tomato paste, olives, raisins, and ground red pepper.
- Cook stirring every once in a while for about 15 minutes.
- Stir in the vinegar and salt if you are using and cook until it is heated through.
- Diabetic Exchanges: 2 3/4 lean meat, 1/2 fruit.
- 2 3/4 vegetable, 1/2 fat.
