Breakfast Pizza Mexicali

  1. Bring a skillet coated with nonstick cooking spray to medium heat.
  2. Add soy chorizo and cook for about 3 minutes, using a spatula to crumble.
  3. Set aside.
  4. Bring a small skillet coated with nonstick spray to medium heat.
  5. Pour in egg substitute.
  6. Cover and then cook until egg "crust" starts to form, about 3 minutes.
  7. Carefully flip your egg.
  8. Top your egg crust with salsa, cooked chorizo, and cheese.
  9. Cover again and cook over low heat until cheese has melted, 1 to 2 minutes.
  10. Garnish with orange slices and cilantro, if using.
  11. Enjoy!
