Dieter's Delight Pumpkin or Butternut and Feta Salad

  1. Steam pumpkin or butternut till tender.
  2. Drain and let cool a bit.
  3. Gently mix in all other ingredients.
  4. Season to taste.
  5. Serve on a bed of quinoa or pasta from daily allowance or even some fresh bread with olive oil on the side.
  6. Can be served at room temperature or even microwaved to piping hot.
  7. I like mine piping hot.
