Spinach Avocado Pasta
- 6 ounces, weight Pasta (any Kind)
- 1 Tablespoon Olive Oil
- 1 cup Raw Spinach
- 2 cloves Garlic, Minced
- 1 whole Small Jalapeno, Seeded And Minced
- 1 whole Avocado
- 1/2 whole Lemon, Juiced
- Salt And Pepper, to taste
- Lemon Zest, To Garnish
- 1 pinch Red Pepper Flakes
- Cook the pasta according to package directions.
- Add the olive oil to a small skillet over medium heat, and cook the spinach, garlic, and jalapeno until the spinach is wilted, about 3 minutes.
- In a food processor, combine the spinach mixture with the avocado, lemon juice, salt and pepper, and pulse until smooth.
- Toss with the cooked pasta, and serve with lemon zest, red pepper flakes, and fresh cracked pepper.
