Braised Rabbit

  1. Combine the flour, salt and pepper.
  2. Dredge the rabbit pieces in the seasoned flour.
  3. Combine the egg and 1 T water.
  4. Dip the rabbit pieces in the egg.
  5. Coat the pieces well with bread crumbs.
  6. Brown on all sides in the hot lard or bacon drippings.
  7. Slowly add 1 c water to the skillet and cover tightly.
  8. Simmer 1 hour or more until tender.
