Coffee Salad Rio
- 1 (3 ounce) package orange gelatin
- 1 tablespoon instant decaffeinated coffee
- 1 cup boiling water
- 14 cup cold water
- 1 (8 3/4 ounce) can crushed pineapple, undrained
- 14 cup nuts, chopped
- 12 cup flaked coconut
- 1 (3 ounce) package cream cheese, softened
- Dissolve gelatin and instant coffee in boiling water.
- Add cold water; blend in cream cheese.Chill until thickened.
- Fold in pineapple, nuts and coconut.
- Spoon into a 1 quart mold or individual molds.Chill until firm.
- Can serve on crisp greens, if desired.
