Coffee Salad Rio

  1. Dissolve gelatin and instant coffee in boiling water.
  2. Add cold water; blend in cream cheese.Chill until thickened.
  3. Fold in pineapple, nuts and coconut.
  4. Spoon into a 1 quart mold or individual molds.Chill until firm.
  5. Can serve on crisp greens, if desired.
