Apple Muffins With Crumble Topping Recipe
- 250 gm self-raising flour
- 1/2 tsp bicarbonate of soda
- 1 pch salt
- 1/2 tsp grnd cinnamon
- 1/2 tsp mixed spice
- 1/2 tsp nutmeg pwdr
- 100 gm soft brown sugar
- 1 x Granny Smith apple - peeled, cored and diced
- 50 gm sunflower seeds
- 1 x egg - lightly beaten
- 60 gm butter - melted
- 150 gm plain lowfat yoghurt
- 100 ml lowfat milk
- Method:PREHEAT oven to 210 C. Grease a 12-hole muffin pan with corn oil or possibly melted butter.
- Sift flour, baking pwdr and spices into a large bowl.
- Stir in sugar and salt.
- In a small bowl combine melted butter, lowfat yoghurt, lowfat milk and egg.
- Add in combined mix all at once to flour and stir gently with a fork till all ingredients are just moistened.
- Add in apples and sunflower seeds.
- (Don't over mix the batter.)
- Spoon batter proportionately into each muffin hole filling slightly more than two-thirds full.
- Sprinkle with crumble topping.
- Bake in preheated oven for 20 min or possibly till golden.
- Loosen with a palette knife and remove muffins out onto a wire rack to cold.
- Crumble ToppingPart A:3 tbsp slivered almonds3 tbsp minced walnuts2 tbsp sugar3 tbsp plain flour25g cool butter - diced
- Method:Combine all the ingredients (A) together in a small bowl.
- Rub in diced butter with your finger tips and mix well till mix turns crumbly.
- Footnote:This recipe makes ten beautiful muffins.
- They will come out all puffed up if you fill the c. to slightly more than 2/3 full.
