Arugula Salad with Grilled Vegetables

  1. For each serving: Toss 1 oz.
  2. of the arugula with 1 Tbsp.
  3. of the dressing.
  4. Place 1 each eggplant slice, tomato piece, zucchini slice and yellow squash slice on plate; top with 1 Tbsp.
  5. peppers and cluster of arugula.
  6. Sprinkle with 1 Tbsp.
  7. parsley and 1 tsp.
  8. pine nuts.
