Chilli Bean & Tomato Rice Recipe capt caveman
- 2 tbsp Sunflower oil
- 1 Whole garlic clove
- 200g/7oz Long grain rice
- 2 tbsp tomato puree
- 500ml/18fl oz Vegetable stock
- 1 small Red onion
- 1 green chilli, seeded & finely chopped
- 400g/14oz can chilli beans in chilli sauce
- Heat oil in a pan & fry the garlic clove until dark golden.
- Add the rice & fry, stirring continuously, until golden, then dicard the garlic
- Stir in the tomato puree into the rice & cook, stirring, for 1 minute.
- Pour in the stock, then add the onion, green chilli, chilli beans and season.
- Bring to the boil, stir & simmer covered for 30 mins or until the rice has absorbed the liquid.
- Can be served hot or cold
