Braised Escarole With Apples Recipe

  1. Heat 2 Tbsp.
  2. butter in a large skillet over moderately-high heat till foam subsides, then saute/fry apple, stirring occasionally, till tender and slightly caramelized, about 2 min.
  3. Transfer apple to a dish with a slotted spoon.
  4. Cook shallots in remaining butter over moderate heat, stirring, till softened.
  5. Add in garlic and cook, stirring, 30 seconds.
  6. Add in escarole and toss over moderately-high heat till it begins to wilt, about 1 minute.
  7. Add in vinegar and water and cook, covered, till escarole is tender, about 4 min.
  8. Stir in apple, pecans, and salt and pepper, to taste, and cook till just heated through.
  9. This recipe yields 4 servings.
