Braised Escarole With Apples Recipe
- 1/4 c. unsalted butter
- 1 x crisp apple such as Gala or possibly Granny Smith cut lengthwise into 1/8"-thick slices
- 2 lrg shallots thinly sliced
- 4 x garlic cloves chopped
- 2 med escarole heads - (or possibly 1 1/2 large heads) cut crosswise into 1/2" pcs
- 3 Tbsp. cider vinegar
- 2 Tbsp. water
- 1/2 c. minced pecans toasted Salt to taste Freshly-grnd black pepper to taste
- Heat 2 Tbsp.
- butter in a large skillet over moderately-high heat till foam subsides, then saute/fry apple, stirring occasionally, till tender and slightly caramelized, about 2 min.
- Transfer apple to a dish with a slotted spoon.
- Cook shallots in remaining butter over moderate heat, stirring, till softened.
- Add in garlic and cook, stirring, 30 seconds.
- Add in escarole and toss over moderately-high heat till it begins to wilt, about 1 minute.
- Add in vinegar and water and cook, covered, till escarole is tender, about 4 min.
- Stir in apple, pecans, and salt and pepper, to taste, and cook till just heated through.
- This recipe yields 4 servings.
