Breakfast Burritos
- 1 lb. sausage
- 1 (16 oz.) pkg. frozen hash brown potatoes
- 1 large onion, finely chopped
- 12 eggs, beaten
- 1/2 c. chopped, peeled and roasted chiles
- salt and pepper to taste
- salsa to taste
- 1 lb. Longhorn cheese, shredded
- 23 flour tortillas, warmed
- Brown sausage in skillet, stirring until crumbly; drain. Spoon into large bowl.
- Brown hash brown potatoes with onion in large skillet, stirring frequently.
- Add to sausage; mix well. Scramble eggs in skillet until done to taste, stirring frequently. Add to sausage mixture.
- Add chopped green chiles, salt, pepper, salsa and shredded cheese.
- Mix well.
- Place 2 tablespoons mixture along one side of each tortilla; roll to enclose filling.
- Serve with additional salsa.
- Makes 24 servings.
