Chicken Basillico Recipe
- 8 boneless, skinless chicken breast
- 2 ripe whole tomatoes, diced
- 4 tbsp. butter
- 4 tbsp. oil
- 1/2 c. white wine
- 1/2 c. chicken stock
- 1/2 pound fresh Mozzarella, sliced
- 3 tbsp. onion, diced
- 2 tbsp. fresh basil
- 2 tbsp. fresh garlic, chopped
- Salt & pepper to taste
- Heat oil in large skillet, flour chicken lightly on both sides.
- Brown for 3 min on each side on high heat.
- Throw away oil, add in butter, onions, garlic and saute/fry till onions are transparent.
- Add in diced tomato, spices and white wine.
- Reduce then add in chicken stock.
- Top with fresh Mozzarella.
- Reduce sauce.
- Approximately 3 min.
- Serves 4.
