Salmon Loaf With Cucumber Sauce
- 1 (16 ounce) can salmon
- 2 egg whites
- 2 tablespoons minced onions
- 12 cup chopped celery
- 2 tablespoons minced green bell peppers
- 2 tablespoons minced chives
- 1 tablespoon chopped fresh dill
- 1 cup breadcrumbs
- 1 tablespoon lemon juice
- 12 cup plain yogurt
- 23 cup seeded finely chopped cucumber
- 1 teaspoon dried dill
- Mix all ingredients of cucumber sauce together and refrigerate until ready to serve.
- Drain salmon, reserving juice; discard skin and bones.
- Add water to salmon juice to make 1/2 cup.
- Combine liquid, salmon and remaining ingredients in large bowl.
- Spoon into a greased loaf pan.
- Bake at 350 for 30-40 minutes.
- Serve with cucumber sauce.
