Eggplant Pizza Bites
- 1 whole Large Eggplant, Cut Into 12 Equally Thick Round Slices
- 1 Tablespoon Extra Olive Oil
- 1 cup Tomato Sauce
- 12 slices Mozzarella (thin Round Slices, About The Size Of Your Eggplant Rounds)
- 1 cup Fresh Spinach
- 1 whole Tomato, Diced
- 1 Tablespoon Grated Parmesan
- Preheat the oven to 425 F.
- On a greased rimmed baking sheet, place the eggplant slices and drizzle the top with a bit of olive oil.
- Bake them for about 15 minutes or until tender.
- Remove from the oven and spread tomato sauce over each eggplant slice.
- Then add mozzarella, spinach, diced tomato and Parmesan to the top of each eggplant slice.
- Turn the oven to broil.
- Put the tray of eggplant into the oven again and broil them for about 3-5 minutes or until golden brown and melted.
