Gumbo

  1. Cook the rice according to the package directions.
  2. Meanwhile, heat the oil in a large pot over medium-high heat.
  3. Add the kielbasa and cook, stirring once, until slightly browned, 2 to 3 minutes; transfer to a large bowl.
  4. Add the chicken to the pot and cook, stirring, until browned, 2 to 3 minutes; transfer to the bowl with the kielbasa.
  5. Add the onion, celery, and green pepper, and 1/4 teaspoon each salt and pepper and cook, covered, stirring occasionally, until just tender, 6 to 8 minutes.
  6. Sprinkle the flour, allspice, and cayenne over the vegetables.
  7. Cook, stirring constantly, until onion begins to brown, 1 to 2 minutes.
  8. Add the broth, tomatoes (and their juices), and thyme; bring to a simmer.
  9. Stir in the okra, kielbasa, and chicken and cook until the okra is tender and mixture is slightly thickened, 5 to 6 minutes.
  10. Serve with the rice.
