Buttertarts
- 24 frozen tart shells
- 12 cup raisins (optional)
- 14 cup margarine
- 12 cup brown sugar
- 12 cup simple syrup
- 12 teaspoon vanilla extract
- 14 teaspoon salt
- 18 teaspoon lemon juice
- 2 eggs
- Preheat oven to 450F Place raisins in small dish, cover with boiling water.
- Allow to soak until edges start to become white.
- Drain.
- Cream margarine and sugar.
- Add vanilla, syrup, salt, and lemon juice.
- Add eggs.
- Mix thoroughly.
- Place tart shells on baking sheet.
- Distribute raisins evenly amongst tart shells.
- Pour prepared mixture into shells, filling 2/3.
- Bake at 425F for 5 minutes.
- Reduce heat to 325F and bake for an additional 12-18 minutes.
- Cool on wire rack.
