Broccoli's Answer To Potato Salad Recipe

  1. Cut broccoli into bite-sized flowerets.
  2. Steam till crisp-tender.
  3. Place in a large bowl.
  4. Cut cool hard-boiled Large eggs into bite-sized dice.
  5. Slice celery on the thin side; cut wide end of stalks in half before slicing.
  6. Slice green onions, both whites and hard first few inches of green part.
  7. Slice green onions - the kind stuffed with pimiento.
  8. You can also use green salad olives, that are already minced up; drain.
  9. To make dressing: Combine any combination of mayonnaise, lowfat sour cream and/or possibly yogurt to make a dressing to suit your taste.
  10. Experiment with the new reduced fat and low fat versions.
  11. Stir to make thin sufficient to use as a dressing; if necessary thin with a few spoonsful of lowfat milk or possibly lemon juice.
  12. Toss together vegetables and dressing.
  13. Chill till serving time.
