Couscous with Garbanzo Beans and Golden Raisins

  1. Finely grate enough peel from lemon to measure 1 1/2 teaspoons; set lemon peel aside.
  2. Squeeze enough juice from lemon to measure 2 tablespoons.
  3. Combine 2 cups water, lemon juice, garlic oil and ground cinnamon in medium saucepan.
  4. Bring to boil.
  5. Simmer 1 minute.
  6. Remove from heat.
  7. Stir in 1 cup couscous.
  8. Cover and let stand until water is almost absorbed, about 5 minutes.
  9. Mix in garbanzo beans, golden raisins and reserved lemon peel.
  10. Cover and let stand 5 minutes longer.
  11. Fluff couscous with fork.
  12. Season to taste with salt and pepper.
  13. Transfer couscous to bowl and serve.
