Beef Encheritos
- 1 lb ground beef
- 1/2 red onion
- 1 16oz can old El Paso Red enchilada sauce
- 3 tbsp molasses
- 4 clove garlic
- 1/8 cup Cilantro
- 1/2 can black olives
- 16 corn Tortillas
- 1 cup Monterey spicy jack cheese
- 2 mini red bell peppers
- Onion chopped fine, ground beef, garlic salt pepper, cumin,coriander in a fry pan till almost done .remove from heat.
- Chop cilantro, and thin shave bell peppers chop fine black olives.
- Get sauce into the pan as it heats up add the molasses
- Dip the tortillas into the sauce 1 by 1 stacking them till ready to use.
- Take each individual tortilla add a bit of ground beef,black olives, and Jack cheese roll up.
- Till pan is filled.
- Pour remaining sauce on top of enchilada then add leftover olives and shaved red bell pepper cook at 300 for 22 min.
