Mexican Meatballs
- 14 ounces ground lean pork
- 12 cup grated zucchini
- 12 cup crushed tortilla chips
- 12 cup scallion, chopped
- 14 cup cilantro
- 1 egg
- 1 teaspoon minced garlic
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 10 ounces enchilada sauce
- Mix all ingredients together.
- Roll into 24 meatballs.
- Brown in a little oil in a large nonstick skillet.
- Add enchilada sauce.
- Cover, simmer 5 minutes or until meatballs are cooked.
