Banana Oatmeal Cookies (With a 'trail Mix' Variation)

  1. Preheat oven to 350F.
  2. In a large bowl cream together butter, brown sugar, white sugar, egg and vanilla extract.
  3. Add the flour, baking soda, and salt.
  4. Mix well.
  5. Mix in the rolled oats, coconut and banana.
  6. Add the chocolate chips.
  7. Mix.
  8. Roll into balls and place on cookie sheet.
  9. Press down with a floured fork if desired.
  10. Bake in preheated oven for 8-10 minutes.
  11. Cookies will still look very soft but the bottoms should be browned.
  12. Makes 24 large cookies.
  13. Note: I also like to subsitute a mix of craisins, raisins, walnuts and white chocolate chips for the 1/2 cup chocolate chips.
  14. This will make the 'Trail Mix' cookie.
