Ranch Style Beans For Fifty
- 5 lb. red or pinto dried beans
- 1/2 gal. water, boiling
- 2 lb. 8 oz. bacon, cut in 1-inch cubes
- cold water
- 3 to 4 pods chili peppers
- 2 qt. canned tomatoes
- 8 oz. onions, sliced
- 2 cloves garlic, chopped
- 1 1/2 Tbsp. salt
- 1 Tbsp. black pepper
- few grains cayenne pepper
- Wash beans.
- Add boiling water.
- Cover and let stand for 1 hour or longer.
- Add bacon to beans.
- Add additional water to cover.
- Cook slowly until tender, about 1 hour.
- Soak chili peppers in warm water.
- Remove seeds.
- Add pods to beans.
- Add tomatoes and other seasonings.
- Cook slowly in kettle an additional 2 hours or pour into a 12 x 20 x 4-inch baking pan and bake at 300u0b0 for 2 to 3 hours.
