Thin Chocolate Cookies
- 1 cup all-purpose flour, sifted
- 1 teaspoon salt
- 1 teaspoon baking soda
- 10 ounces sugar, softened
- 6 ounces unsalted butter, softened
- 2 eggs
- 2 vanilla beans, split and scraped
- 4 ounces walnuts, chopped
- 4 ounces gourmet baking cocoa
- 1 In small bowl, whisk together flour, salt and baking soda and set aside.
- 2 In another bowl, combine sugar and butter, mixing on low speed 1 - 2 minutes.
- 3 Add in eggs and scraped vanilla beans, mix well.
- 4 Add flour mixture in small amounts mixing thoroughly after each addition.
- 5 Add the walnuts and the cocoa and continue to mix until all the ingredients are incorporated.
- 6 Place the dough in the fridge for 30 minutes.
- 7 Preheat oven 325 degrees Fahrenheit.
- 8 Line a baking sheet with parchment paper or a silicone mat.
- 9 Divide the dough into 1 tbsp portions rolled into balls
- 10 Transfer to the lined baking sheets spacing about 3 apart.
- 11 Flatten with the bottom of a glass dusted with powdered sugar to 1/3 thickness.
- 12 Bake for about 12 minutes rotating half way through.
