Abrigos De Vegetal (Vegetable Wrap)
- 5 individual egg roll wraps
- 14 cup broccoli (tops only)
- 18 cup mozzarella cheese (more or less depending on what you like)
- 23 cup tofu (or meat product, but this is a vegetarian recipe so its tofu)
- 1 tablespoon sliced carrot
- 1 tablespoon cabbage or 1 tablespoon lettuce
- 12 teaspoon onion powder (more of less depending on what you like)
- 12 teaspoon basil

- Now that you have the ingredients, your ready to cook.
- First, take out a stir fry pan and put a reasonable amount of cooking oil in it.
- Next, crumble up medium or extra firm tofu and add the onion powder to it.
- Put that mixture into the pan and let it brown on high heat.
- Now, after that is browned up, add the carrot, broccoli, and lettuce/cabbage into the pan.
- Cook that on medium heat for about 2 minutes then turn to simmer and add cheese.
- Cover with a lid and let it sit for a minute.
- Now that your insides are all done, we need to roll the egg wrap.
- Take out a sheet of egg roll wrap and make it in a diamond shape.
- Then, place insides directly in the middle horizontally.
- Now, roll the bottom side up, covering the insides.
- Next, roll the left side in and the right side inches now roll the bottom up until you have the top side folded over and it looks like an egg roll.
- Repeat this till you have used all five of your sheets.
- Now its time to fry them up!
- Well, deep frying is not a must here, they taste good either way.
- I just fry them in the pan I used for the tofu earlier.
- Then after their brown on both sides, let them cool off and there ya go!
