Triple-Berry Cheesecake Squares
- 36 reduced-fat vanilla wafers, finely crushed (about 1-1/4 cups)
- 3 Tbsp. margarine, melted
- 3/4 cup (3/4 of 8-oz. tub) PHILADELPHIA Fat Free Cream Cheese
- 1/4 cup granular no-calorie sweetener
- 1 cup thawed COOL WHIP Sugar Free Whipped Topping
- 2 cups mixed fresh berries (blueberries, raspberries, sliced strawberries) Whole Foods 3 For $10.00 thru 02/09
- 3/4 cup boiling water
- 1 pkg. (0.3 oz.) JELL-O Lemon Flavor Sugar Free Gelatin
- 1 cup ice cubes
- Mix wafer crumbs and margarine; press into bottom of 9-inch square pan.
- Beat cream cheese and granulated sweetener in large bowl with mixer until blended.
- Gently stir in COOL WHIP; spread over crust.
- Top with berries.
- Refrigerate until ready to use.
- Add boiling water to gelatin mix in medium bowl; stir 2 min.
- until completely dissolved.
- Add ice; stir until melted.
- Refrigerate 10 min.
- or until slightly thickened; spoon over berry layer in pan.
- Refrigerate 3 hours or until firm.
