Baked Key Lime Pie

  1. Preheat oven to 325F (160C).
  2. In a medium-sized bowl, mix together sweetened condensed milk and egg yolks until well-blended.
  3. Slowly stir in the lime juice ( for more tart flavor, use 1/2 cup juice), stirring gently just until blended.
  4. Pour into pie crust and bake for 10 minutes.
  5. Allow to cool at room temperature, then chill before serving.
  6. Top with whip cream, if desired.
  7. I think it's best with the whipped cream.
