Blackberry Wine Recipe
- 3 x liters blackberries
- 4 x liters Warm water
- 8 x liters apple juice
- 2 x liters Cool water added 12 c. sugar (half corn/half regular)
- 7 x campden tablets
- 1 1/2 tsp yeast nutrient
- 1 tsp pectic enzymes
- 4 tsp acid blend
- 30 gm oak chips Lalvin EC-1118 wine yeast
- Mashed the berries in the primary and then poured in the 4L warm water.
- Added ALL the ingredients except the cool water and yeast.
- Let sit 24 hrs.
- Next day, add in the 2 liter cool water and check the SG.
- Should be about 1.070 to 1.075.
- Add in the wine yeast and start the ferment.
- This started bubbling slowly and is still fermenting after 16 days in my basement (about 68 F).
