Shrimp Ceviche

  2. Lay shrimp in a 9x11 glass baking dish, cover with citrus juice and allow to marinate for 3 hours in the refrigerator.
  3. (The juice will cook the shrimp.)

  5. After 3 hours, combine the remaining ingredients in a large bowl.
  6. 3.
  7. Refrigerate for 1 more hour.
  8. Note: Serve over tostadas or chips!
  9. Great for picnics or as an appetizer.
