Sage and Chive Steaks With Arugula Salad

  1. In bowl, combine oil, garlic, chives, and sage.
  2. Season steaks with salt and pepper, then coat with oil mixture.
  3. Heat a large skillet over high heat and cook steaks to desired doneness.
  4. Transfer to a plate.
  5. Top steaks with cheese, cover with foil and let stand for 5 minutes.
  6. Toss the arugula and tomatoes with the lemon juice.
  7. Drizzle with some olive oil, season with salt and pepper to taste.
  8. Serve alongside steak.
