Shrimp and Feta Quesdillas #Ragu

  1. Add olive oil to a skillet on medium high heat.
  2. Sautee shrimp with salt, pepper, and red pepper flakes for 2-3 minutes until shrimp starts turning pink.
  3. Add Ragu roasted garlic pasta sauce, mint, golden raisins, and capers to shrimp and simmer 2-3 minutes.
  4. Turn heat off.
  5. Place shrimp mixture on a corn tortilla.
  6. Divide feta cheese into 4 sections, and add 1 section on top of shrimp mixture.
  7. Top with 1/4 of thepine nuts and cover with another corn tortilla.
  8. Repeat until 4 quesadillas are assembled.
  9. Heat a nonstick skillet to medium high heat.
  10. Cook each quesadilla 3-5 minutes per side until browned slightly.
  11. Enjoy!
