Almond Filling
- 6 ounces almonds whole or slivered
- 23 cup sugar
- 4 tablespoons butter, unsalted 1/2 stick, softened
- 1 large eggs
- 1/2 tablespoon lemon zest freshly grated
- 1/2 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- Add all the ingredients in a food processor.
- Process until almonds are finely ground and the mixture is well combined.
- Transfer to a small bowl.
- Cover; keep in the refrigerator for at least 3 hours and up to 2 days.
