Chicken And Zucchini Salad Recipe

  1. About 3 hrs before serving:
  2. Remove meat from chicken and cut into match stick strips; chill.
  3. In a small saucepan combine flour, salt, sugar, curry pwdr and pepper.
  4. With wire whisk stir in chicken broth, lowfat milk, vinegar and garlic.
  5. Cook over medium-low heat, stirring constantly, till dressing is thickened, about 5 min.
  6. Cover dressing and chill till well chilled.
  7. Just before serving:
  8. In a large bowl, with a fork, combine dressing, chicken, zucchini and green onions; toss well.
  9. Arrange lettuce leaves in a salad bowl.
  10. Spoon chicken mix on leaves.
  11. Serves 6.
