Refreshing Chinese-Style Eggplants
- 2 Eggplant
- 4 Okra
- 50 ml Vinegar
- 1 tbsp Kombu based mentsuyu
- 1 tbsp Sesame oil
- 1 tbsp Sugar
- 1 tbsp Juice from grating the ginger
- 1 Oil for deep frying
- Cut the eggplants in half lengthwise.
- Cut 2-3 diagonal notches into the skin.
- Cut a 1 cm notch into the okra.
- Using the oil for deep-frying, fry the eggplants starting from the skin side until slightly browned.
- Also deep-fry the okra.
- Dish up the okra and eggplants.
- Serve with the sauce mixture that you've mixed together.
