- 1 1-lb. pkg. chicken-flavored seitan strips
- 13 cup grated carrot
- 1 stalk celery, minced
- 13 cup minced red or green onion
- 13 cup pecans, optional
- 13 cup low-fat or vegan mayonnaise
- Salt and pepper to taste
- 8 slices bread of choice
- Lettuce leaves and tomato slices for garnish
- Cut seitan into bite-sized pieces.
- In large bowl, mix seitan and remaining ingredients.
- Serve on bread with lettuce and tomatoes.
