Vegan Peanut Butter Chocolate Chip Cookies
- 2 bananas, mashed
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon coffee liqueur
- 2 teaspoons water
- 1 cup chocolate chips
- 1 12 cups peanut butter
- 1 cup brown sugar
- 1 cup sugar
- 14 cup soymilk
- 12 cup vegan margarine
- Mix flour, sugar, brown sugar, peanut butter, salt, margarine, baking soda, coffee liquor, water and bananas until somewhere between wet and dry.
- Add soy milk and stir until a cookie dough-like texture is reached.
- Add chocolate chips and stir.
- Form 1 inch balls of dough and place about 2 inches apart on a cookie sheet.
- (6 per cookie sheet).
- Score them with a fork.
- Bake on 350 for 8-12 minutes.
