Aquavit-Marinated Shrimp

  1. Combine first 6 ingredients in large bowl.
  2. Stir in 2 teaspoons Dijon mustard and 1/4 cup chopped dill.
  3. Set marinade aside.
  4. Place 1/4 cup chopped dill in medium saucepan.
  5. Add 4 cups water.
  6. Bring to boil.
  7. Stir in shrimp.
  8. Remove from heat.
  9. Let stand until shrimp are opaque in center, about 2 minutes.
  10. Drain shrimp; reserve 1/4 cup cooking liquid.
  11. Stir reserved cooking liquid into marinade.
  12. Add shrimp.
  13. Cover; chill 2 hours, tossing occasionally.
  14. Drain; reserve 3 tablespoons marinade.
  15. Mix mayonnaise, 2 tablespoons Dijon mustard and 3 tablespoons marinade in small bowl.
  16. Season with salt and pepper.
  17. (Shrimp and sauce can be made 6 hours ahead.
  18. Chill separately.)
  19. Arrange dill sprigs on platter.
  20. Arrange shrimp and tomatoes atop dill.
  21. Serve with sauce.
