Antony's Spare Ribs Recipe
- 2 x 1/2 lb spare ribs, (10 meaty spare ribs)
- 1 pt Ketchup
- 1 med Onion, finely sliced
- 1 x Clove garlic, finely minced
- 1 x Chilli, finely sliced Fennel seeds
- 6 ounce Sugar, soft brown, up to 8
- 1/4 pt Soya sauce
- 2 fl ounce water, up to 3
- In a large warm pot sweat the onions and garlic in extra virgin olive oil.
- Add in the fennel seeds, chilli, sugar and soya sauce.
- Turn the heat up and stir in the tomato ketchup and add in a little water to thin down the sauce.
- Add in the spare ribs and stir till the ribs are well coated.
- Turn the heat down and simmer till the meat is tender, approximately and hour and a half.
- Remove the ribs from the pot and skim off the fat from the sauce with a ladle.
- Now pour the sauce over the rubs and serve.
