7 layer bean dip
- 2 can refried beans
- 1 can green chili peppers (2 cans if preffered)
- 1 hot sauce to taste
- 1 dash cumin to taste
- 3 avocados
- 1 fresh lime (juice)
- 1 dash salt to taste
- 1 cup chopped tomato
- 1 tbsp chopped cilantro
- 1 pints sour cream
- 2 envelope shredded cheese of choice
- 1 pico de gallo or chunky salsa of choice
- 1 handful of cilantro leaves
- 1 large chopped red onion
- Begin by throwing the refried beans into a small pan over medium-low heat.
- We want to heat up the beans so they lose that just-out-of-the-can quality.
- Stir in undrained green chilies and hot sauce.
- Taste.
- Stir in cumin to taste.
- Smear beans in 9x13 glass dish, top with cheese of choice as next layer
- Layer on sour cream, try not to disturb cheese
- Make fresh guacamole: peel avocados, keep cores in bowl while mashing (keeps it from browning), stir in juice of lime, 1 tbsp.
- Cilantro, tomatoes and 2/3 of large red onion, salt to taste
- Layer on guacamole, try not to disturb sour cream
- Add cheese layer; then evenly spread pico/salsa
- For color: sprinkle with rest of chopped onion and cilantro leaves
