Cool Fruited Shrimp Salad
- 3 oz. fresh or frozen shrimp
- 1/8 medium red onion
- 1 kiwi
- 1/8 lb. sliced fresh strawberries
- 1/4 lb. mixed salad greens
- 2 Tbsp. KRAFT Lite Raspberry Vinaigrette Dressing
- 1 Tbsp. MAXWELL HOUSE Coffee, Regular or Decaf
- 4 tsp. KRAFT Caramel Topping
- 4
- 1/2 cup low-fat frozen yogurt
- Cook and cool shrimp.
- Alternatively, purchase already cooked shrimp.
- Slice onion thinly; peel and slice kiwi; slice strawberries (1/8 pound = 4 to 5 large berries); tear greens (1/4 pound = 2 cups greens).
- Arrange shrimp, onion and fruit over greens.
- Drizzle with dressing.
- Make Caramel Coffee Dessert Drink by placing coffee in filter brew basket of coffee maker.
- Place Caramel topping in empty pot of coffee maker.
- Prepare coffee with 8 oz.
- of cold water.
- When brewing is complete, stir until well mixed.
- Enjoy salad and drink with crackers and measured amount of frozen yogurt.
