Hoecakes

  1. Combine cornmeal, flour, baking powder, & salt in medium bowl & mix well.
  2. Stir in oil.
  3. Add just enough milk to batter to make the batter the consistency of pancake batter & mix well.
  4. Spray skillet/griddle with cooking spray.
  5. Preheat pan over medium-high heat.
  6. Pour batter by 1/4 cupfuls onto hot griddle/skillet.
  7. Cook until cakes are browned on both sides, about 1 to 2 minutes per side.
  8. Serve hot with butter & honey/syrup.
