Christmas Eve Salad

  1. Place oranges, bananas, beets, pineapple and jicama in bowl. Mix reserved beet liquid and pineapple juice, then lemon juice, 2 tablespoons sugar and the salt; pour over fruit.
  2. Let stand 10 minutes; drain.
  3. Arrange fruit on shredded lettuce.
  4. Garnish with lime, peanuts and pomegranate seed.
  5. Mix anise seed and 1 tablespoon sugar; sprinkle over salad.
  6. Serves 8 to 10.
