Christmas Eve Salad
- 2 medium oranges, peeled and sectioned
- 2 bananas, sliced
- 1 can (8 1/4 oz.) sliced beets, drained (save liquid)
- 1/2 jicama, peeled and sliced or 1 (8 oz.) can water chestnuts, drained and sliced
- 2 Tbsp. lemon juice
- 2 Tbsp. sugar
- 1/2 tsp. salt
- 3 c. shredded lettuce
- 1 lime, cut into wedges
- 1/4 c. chopped peanuts
- 1/3 c. pomegranate seed or sliced radishes
- 1 Tbsp. anise seed
- 1 Tbsp. sugar
- Place oranges, bananas, beets, pineapple and jicama in bowl. Mix reserved beet liquid and pineapple juice, then lemon juice, 2 tablespoons sugar and the salt; pour over fruit.
- Let stand 10 minutes; drain.
- Arrange fruit on shredded lettuce.
- Garnish with lime, peanuts and pomegranate seed.
- Mix anise seed and 1 tablespoon sugar; sprinkle over salad.
- Serves 8 to 10.
