Green Sauce
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 2 tablespoons lemon juice
- 3 garlic cloves, minced
- 12 teaspoon salt
- 12 teaspoon pepper
- 14 cup packed fresh basil leaf
- 14 cup packed dill sprigs
- 14 cup packed parsley sprig
- 4 ounces fresh spinach
- 14 cup plain yogurt
- In small bowl, blend oil, mustard, lemon juice, garlic, salt and pepper until well mixed.
- In food processor or blender, process basil, dill and parsley until minced.
- Add spinach; process until pureed and smooth.
- Add yogurt.
- With machine running, gradually add oil mixture; process until thick mayonnaise consistency.
- Refrigerate.
- Serve over grilled fish.
