Best Ever Blueberry Muffins Recipe
- 1/2 c. butter, softened
- 1 c. sugar
- 2 Large eggs
- 2 c. flour
- 2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1/2 c. lowfat milk
- 1 teaspoon vanilla
- 2 c. blueberries
- Sugar
- Line 12 c. muffin pan with baking c..
- In large bowl, with mixer at medium speed, cream butter and sugar till light and fluffy.
- Add in Large eggs, one at a time, beating well after each addition.
- Stir together flour, baking pwdr and salt.
- Add in alternately to the creamed mix with lowfat milk and vanilla.
- Fold berries into batter and spoon into muffin pan.
- Sprinkle with sugar.
- Bake 30 min at 375 degrees.
- Cold 5 min in pan.
- Serve hot.
- Yield: 15 servings.
