Taco cornbread
- 2 box jiffy corn muffin mix
- 1 lb seasoned taco meat
- 1 can rotel
- 2 cup shredded cheese of choice
- My on box of muffin mix layer bottom of cast iron skillet or 13x9 in pan
- Layer 1 cup cheese taco meat the 2nd cup of cheese then mix and add second layer of corn bread
- Bake 30 minutes and add topping such as a our cream if desired
