Lean and Mean Buffalo Salad

  1. Heat oven to 475*.
  2. Line jelly-roll pan with foil; coat with cooking spray.
  3. Mix flour, garlic powder, paprika, and salt in zip-top bag.
  4. Add chicken; shake to coat.
  5. Place chicken on pan; coat with cooking spray.
  6. Bake 10 minutes, turning once, or until cooked through.
  7. Remove to bowl, add pepper sauce and toss to coat.
  8. Let cool slightly.
  9. Meanwhile toss remaining ingredients except dressing in large bowl.
  10. Add chicken; toss.
  11. Serve dressing on the side.
  12. Serves 4.
  13. Note: The hot sauce in this recipe should be of the milder variety.
  14. If what you've got is super-hot, use less.
